2. Making Herbal Teas:
a) For an Herbal Tea you need three teaspoons/cup of water, if the leaves are fresh and 1 teaspoon/cup of water if the leaves are dry.
b) You should harvest when the dew is dried but in the morning when the plants are oily.
c) The best harvesting time for most of the herbs is before they bloom.
d) Prepare the tea by crushing the leaves, to release their oils and flavors. You can mix different herbs. This will create different kinds of flavors.
e) Crush the leaves short time before you are ready to use them, otherwise they will lose their flavors.
f) Put them into a teapot or directly into a mug or a cup. Pour boiled water over them.
g) Allow time (5 to 10 minutes) to steep. This process will release the flavors.
h) If you wish, you can preserve your herbs, drying them. You can make hot cups of teas during the cold season.
i) Using bergamot, rose hips and peppermint, you can have a good version of iced tea.
j) You can make a delicious spicy tea, adding coriander spice (cilantro) to a coriander infusion.

3. Cautions:
a) Avoid using herbs with pesticide residues.
b) If you are allergic to ragwort, avoid drinking chamomile tea.
